Those are good appetizers but not much for a good hearty meal.

As I always grill our dinner during the weekdays in warmer weather, I've been preparing meals during the colder months as well. Most are crock pot recipes, save for 2 weeks ago, which was a vegetable lasagna of zucchini, purple onions, red and green bell peppers, tomatoes, mozzarella and parmesan cheeses on whole wheat lasagna noodles.

The last crock pot recipe was a chicken tortilla soup with serrano and corn corn bread.

            I'm kiddin'.

Just what it says. A soup made with lettuce. Had torn, mixed lettuce leftover from a couple of days ago. Sautéed onion and garlic powder. Added the lettuce and let it sweat down. Put a blob of mashed cauliflower casserole and a couple of shakes of coriander. Then added fat free half and half. Hit the spot!!!

See above. Want to add using lettuce is like making a soup with spinach. I don't purée because I like texture. Lettuce doesn't get mushy like spinach

Also try kale. It holds texture fairly well. Corn husks hold texture the best.
