Souse and polk salad casserole.Extremism is so easy. You've got your position, and that's it. It doesn't take much thought. And when you go far enough to the right you meet the same idiots coming around from the left.

Yesterday made 3lbs. of pasta. Saved 1lb. of penne for today. Making a cheese/white wine sauce with fresh grated provolone. I'm gonna smother the cooked pasta in this. I'm baking my last butternut squash from my garden....7lb. monster, seasoned with kosher salt, ground black pepper, dried rosemary, and fresh grated nutmeg. Nice drizzle of evoo. Frying a lb of pancetta and a larged onion. Mix the squash, pancetta, and onion and spread over pasta with cheese sauce. Sprinkle with fresh grated parmesan, and roast at 450 until the cheese starts to brown. House smells great!!👍 1Comment

First time I made this dish and MAN-O-MAN was it good!!! They don't serve dishes like this at Vincenzo's
. The combination of nutmeg, provolone/wine sauce, rosemary, bacon, fresh pasta, and the squash nearly brought tears to my eyes. When I took it out of the oven it looked like a beautiful picture lol. I had a friend over and we had arugula salad, baguette, and Pinot Grigio. Amazingly good.
